The honey
Honey is a natural sweetness that honeybees produce from flower nectar. It consists mainly of glucose, fructose, water and small amounts of enzymes, vitamins and minerals. Bees transform the nectar using enzymes and store it in the honeycomb, where it matures into honey.
Honey has many uses as a natural sweetener and is considered healthy due to its antibacterial and antioxidant properties and as a home remedy for coughs and sore throats. Its benefits vary depending on the variety, but honey is generally considered a better alternative to refined sugar as it provides nutrients as well as sweetness.


Honey: Natural ingredients and their effects
In addition to certain types of sugar, minerals, vitamins, organic acids, amino acids and fragrances, honey also contains hormones. These have a harmonising effect on the human nervous system. The natural antibiotic substances in honey are summarised under the collective term inhibins. They have a similar effect to antibiotics. Because they are very sensitive to heat, honey should never be heated above 40°C.
Honeycombs are the most original form of honey, containing valuable ingredients as well as propolis, which has a strong antiseptic effect. Honeycombs can be consumed directly in muesli/porridge, smoothies or directly on bread.

In addition, children under the age of one should not be given honey as it carries the risk of botulism.
